At the beginning their smooth version was popular in the Naples area and was called, because of its curved shape, "Elephant teeth". The later add-on of thin grooves, similar to celery grooves, probably originated in Tuscany. That is when they started to be called Sedani (Celeries) changing their original name. Sedani has a short structure, an essential and slightly curved shape. Their strong point lies in the thin grooves that retain even the most delicate and light sauces, without loosing a single drop. Sedani is an ideal basis for the most innovative creations and for traditional recipes, and their success on any table talks the language of great Italian gastronomic culture.
Made since 1908 in the traditions of the family company, Valentino Felicetti has found the link with modern consumer with a full line of responsible, organic artisan pasta, home-grown. From the family business in the Dolomites, the Felicetti family is passionately creating pasta of the highest quality. From the moment of harvesting the best crop to the serving of the pasta on the table, the product quality is ensured by very careful decisions. Felicetti family uses only the purest grain with full flavor and spring water from Mount Latemar at 2000 meters altitude in Val di Fiemme. Of course, Valentino Feticetti is using a bronze die to form the pasta. The drying of the paste in the pure mountain air ensures a unique taste of all pasta products made by Felicetti. Due to a slow drying process at medium temperature (around 80 ° C), the nutrition, the amino acids and the flavor is best preserved and prevents damage to the structure of the pasta by excessive heat. The eggs used in Valentino Felicetti’s egg pasta come from real free range chickens. Valentino Felicetti is a member of the CCPB since 1995, the Italian certification body for organic products.
Sedani can successfully be used with fresh vegetables sauces with, to creamy ones with dairy cream and cheese, possibly enriched with the cheerful touch of walnuts or aromatic herbs. Perfect also with a simple tomato sauce, sprinkled with Parmigiano Reggiano, really meeting the taste of all authentic Italian pasta lovers. For an easy to prepare, yet greatly refined first course dish, we suggests trying them with typically Mediterranean appetizing and fragrant flavours of ricotta cheese (a very fresh sweet cheese similar to cottage cheese made with sheep or cow milk) and basil.
